Ingredients

  • 1 cup fusilli pasta dry
  • 3 tablespoons olive oil
  • 6 chicken tenderloins cut into chunks
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • garlic powder to taste
  • salt to taste
  • pepper to taste
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 2 cups frozen mixed vegetables
  • 1 cup breadcrumbs
  • 2 tablespoons parmesan cheese grated
  • 2 tablespoons butter melted

Directions

  • Preheat the oven to 400 degrees F.
  • Lightly grease a medium baking dish.
  • In a large pot of lightly salted, boiling water, cook the pasta to al dente, according to the package directions.
  • Heat the oil in a skillet over medium heat.
  • Add the chicken pieces to the oil and season them with the minced onion, the basil, the parsley, the garlic powder, the salt, and the pepper.
  • Cook and stir the chicken pieces until they reach an internal temperature of 165 degrees F.
  • In the same skillet, combine the pasta, the cream of chicken soup, the cream of mushroom soup, and the mixed vegetables with the chicken pieces.
  • Pour the chicken mixture into the prepared baking dish.
  • In a small bowl, mix the breadcrumbs, the parmesan cheese, and the butter.
  • Evenly sprinkle the breadcrumb mixture over the casserole.
  • Bake the casserole until it is bubbly and lightly browned, and 30 minutes.
  • Serve.
