Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup butter softened and cut into small chunks
- 3/4 cup orange juice
- 1 tablespoon orange zest
- 1 egg beaten
- 1 cup cranberries chopped
- 1/2 cup walnuts optional, chopped
Directions
- Preheat the oven to 350 degrees F.
- Grease an 8-1/2x4-1/2-inch loaf pan.
- In a medium bowl combine the flour, the sugar, the baking powder, the salt, and the baking soda.
- Add the butter and mix until fully incorporated.
- Pour in the orange juice, the orange zest, and the egg and combine thoroughly.
- Fold the cranberries and the walnuts into the batter.
- Spoon the batter into the greased loaf pan.
- Put the loaf pan in the oven and bake until a toothpick inserted into the center comes out clean, about 60-75 minutes.
- Remove from the oven and allow to cool in the pan for about 10 minutes.
- Transfer the loaf to a wire rack to cool completely, about 30 minutes.
- Serve!
