Ingredients
- 1 1/2 cups chicken broth
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- ground black pepper to taste
- 2 1/2 pounds baking potatoes peeled, cut into wedges
- paprika optional, to taste, for garnish
- parsley leaves optional, to taste, for garnish
Directions
- Preheat the oven to 350 degrees F.
- In a 9x13-inch baking dish, add the chicken broth, the oil, the lemon juice, the garlic, the oregano, the salt, and the black pepper and stir to combine.
- Add the potato wedges to the broth mixture and stir to coat.
- Bake the seasoned potato wedges until the potatoes are fork-tender, about 1 hour 30 minutes-1 hour 45 minutes.
- Transfer the baking dish to a wire rack and let the seasoned potato wedges rest, about 10 minutes.
- Serve the seasoned potato wedges garnished with the paprika and the parsley.
