Ingredients

  • water to taste
  • 4 pounds small Yukon Gold potatoes
  • 1/2 cup unsalted butter
  • 1/2 cup fresh sage leaves
  • kosher salt to taste

Directions

  • In a Dutch oven, add the water to a depth of 1/2-inch.
  • Place a steam basket in the Dutch oven.
  • Bring the water to a boil over high heat.
  • Place the potatoes carefully in the steamer basket.
  • Cover the Dutch oven and reduce the heat to medium.
  • Steam the potatoes until tender, about 30-35 minutes.
  • Allow the potatoes to cool for 10 minutes.
  • In a large skillet over medium heat, melt the butter.
  • Add the sage leaves to the melted butter and cook, while stirring constantly, until the leaves turn dark green in spots and the butter is lightly golden-brown, about 4-5 minutes.
  • Transfer the sage butter from the heat.
  • On a baking sheet, add the potatoes and spread them out evenly.
  • Using the bottom of a glass measuring cup, gently smash the potatoes.
  • Transfer the smashed potatoes to a large serving bowl.
  • Add the sage butter to the potatoes and gently toss to combine.
  • Season the potatoes with the salt.
  • Serve.
