Ingredients
- 2 tablespoons olive oil
- 1 pound mild Italian pork sausage casings removed
- 3 cloves garlic chopped
- 1 pound bowtie pasta
- 3 cups chicken broth
- 2 cups water
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups small broccoli florets
- 1/2 cup sun-dried tomatoes julienned and drained of oil
- 1/3 cup heavy cream
- 1/2 cup parmesan cheese grated, plus more, to taste, for serving
- 2 tablespoons fresh lemon juice
- red chili flakes optional, to taste, for serving
Directions
- In a large pot over medium-high heat, add the olive oil and the sausage and cook, while breaking up the meat, until it is no longer pink, about 5-7 minutes.
- Use a slotted spoon to transfer the sausage to a plate and set aside.
- Reduce the heat to medium, add the garlic cloves to the pot, and cook for 1 minute.
- Add the pasta, the broth, the water, the oregano, the salt, and the pepper to the pot and bring to a simmer.
- Reduce the heat to medium-low to keep the pasta mixture simmering and stir occasionally.
- Stir the broccoli into the pasta mixture.
- Cover the pot and cook, stirring halfway through, until the pasta and the broccoli are just tender, about 5 minutes.
- Add the sun-dried tomatoes, the heavy cream, and the cooked sausage to the pasta mixture and cook until it is heated through, about 1 minute.
- Transfer the pot from the heat and stir in the parmesan cheese and the lemon juice.
- Top the pasta with the extra parmesan cheese and the red chili flakes.
- Serve.
