Ingredients

6 chicken thighs boneless and skinless
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
10 cloves garlic peeled and halved
2 tablespoons brandy or chicken stock
1 cup chicken stock
1 teaspoon fresh rosemary minced, or 1/4 teaspoon dried rosemary, crushed
1/2 teaspoon fresh thyme minced, or 1/8 teaspoon dried thyme
1 tablespoon fresh chives minced, for serving

Directions

Sprinkle the chicken with the salt and the pepper.
In a large cast-iron skillet or other heavy skillet, heat the oil over medium-high heat.
Brown the chicken in the oil on both sides, about 2-3 minutes.
Transfer the chicken to a plate.
Transfer the skillet from the heat and add the garlic and the brandy.
Return the skillet to the heat and cook the garlic mixture, while stirring, over medium heat until the liquid is almost evaporated, about 1-2 minutes.
Stir 1 cup of the stock, the rosemary, and the thyme into the sauce mixture.
Return the chicken to the pan.
Bring the chicken mixture to a boil.
Reduce the heat and simmer, uncovered, until the chicken reaches 170 degrees F internally, about 6-8 minutes.
Sprinkle with the chives and serve.
