Ingredients
- 10 tablespoons unsalted butter room temperature
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1 (18.25-ounce) box chocolate chip muffin mix
Directions
- Preheat the oven to 350 degrees F.
- Line two 18x26-inch baking sheets with parchment paper.
- In a bowl of a stand mixer, add the butter and beat until it is light and fluffy, about 2-3 minutes.
- Add the egg and the vanilla extract to the butter and mix to combine.
- Add the muffin mix to the butter mixture and mix until it is just combined. Be careful not to overmix.
- Use a cookie scoop to drop 2 tablespoon-sized scoops of the cookie dough on the prepared baking sheets, about 1 inch apart.
- Bake the cookies until golden around the edges but still soft, about 11-13 minutes.
- Transfer the baking sheets to a wire rack and let the cookies cool, about 2 minutes.
- Place the cookies on the wire rack and let them cool completely.
- Serve.
