Ingredients
- 2 strips bacon cut into 1/4-inch pieces
- 1/2 cup onions chopped
- 1 clove garlic minced
- 1/2 teaspoon Worcestershire sauce
- 1/2 cup canned red kidney beans rinsed and drained
- 1/2 cup canned diced tomatoes
- 3/4 cup frozen mixed vegetables of your choice
- 2 cups low-sodium chicken broth
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarsely ground black pepper
- 1/2 cup small shell pasta
Directions
- In a medium-sized pot over medium heat, add the bacon pieces and cook, while stirring frequently, until they are crispy, about 5-7 minutes.
- Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Leave the bacon drippings in the pot.
- Add the onions to the hot bacon drippings in the pot and cook, while stirring, until they become slightly translucent, about 1 minute.
- Add the garlic to the onions and cook, while stirring, until fragrant, about 30 seconds.
- Add the Worcestershire sauce, the kidney beans, the diced tomatoes and their juices, and the mixed vegetables to the onion mixture and stir to combine.
- Cook the bean mixture, while stirring, until it is heated through, about 1 minute.
- Add the chicken broth to the bean mixture and stir to combine.
- Add the bacon to the soup mixture and stir to combine.
- Season the soup mixture with the salt and the black pepper and stir to combine.
- Increase the heat to medium-high heat and bring the soup mixture to a gentle bubbling simmer.
- Reduce the heat to low and allow the soup mixture to simmer, while stirring occasionally, until the flavors meld together, about 10 minutes.
- Add the pasta to the soup and simmer until the pasta is al dente, about 6-8 minutes.
- Serve.
