Ingredients

  • 1/4-1/3 cup all-purpose flour
  • 1 (3.5-4-pound) broiler/fryer chicken cut up
  • 2 tablespoons canola oil
  • 2 1/3 cups water
  • 1 1/2 cups long-grain rice uncooked
  • 1 cup 2% milk
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon pepper
  • fresh parsley to taste, minced

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 13x9-inch baking dish.
  • Add the flour to a shallow bowl.
  • Dredge the chicken in the flour and coat on all sides, shaking off the excess.
  • In a large skillet over medium heat, heat the oil.
  • Add the chicken to the oil, in batches, and cook until it is browned.
  • In a large bowl, combine the water, the rice, the milk, the salt, the poultry seasoning, and the pepper.
  • Pour the rice mixture into the prepared baking dish.
  • Top the rice mixture with the browned chicken.
  • Cover the dish with foil and bake until the chicken juices run clear, about 50-55 minutes.
  • Sprinkle the casserole with the parsley.
  • Serve.
