Ingredients
For the meatloaf:
- 1 1/2 pounds ground beef
- 1/4 yellow onion finely chopped
- 2/3 cup seasoned dry breadcrumbs
- 1/3 cup whole milk
- 1 large egg lightly beaten
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
For the mashed potatoes:
- 2 pounds potatoes peeled and cut into 1-inch chunks
- 1/3 cup unsalted butter
- 1/2 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon coarse ground black pepper
- 1 cup cheddar cheese shredded
- 1/2 cup bacon bits cooked and crumbled
Directions
- Preheat the oven to 375 degrees F.
- In a large bowl, gently combine the beef, the onion, the breadcrumbs, the milk, the egg, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.
- Press the beef mixture into a 9x9-inch baking dish.
- Bake the beef mixture, uncovered, for 15 minutes. Drain the excess grease.
- In a large pot, combine the potatoes and just enough water to cover the potatoes, bring the water to a boil, and cook for 15 minutes.
- Drain the water from the potatoes.
- Add the butter, the milk, the remaining salt, and the remaining pepper to the potatoes and mash together until creamy.
- Spread the potato mixture over the beef mixture and top with the cheddar cheese and the bacon.
- Bake the casserole until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are slightly crispy, about 15 minutes.
- Serve.
