Ingredients

For the cherry filling:

  • 5 cups cherries pitted, sweet or sour
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon pure almond extract

For the topping:

  • 1 cup rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup whole wheat flour
  • 1/2 cup brown sugar lightly packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter melted
  • vanilla ice cream whipped cream, or yogurt, optional, for serving

Directions

  • Place an oven rack in the center position.
  • Preheat the oven to 375 degrees F.
  • Lightly coat a 9x9-inch or a 7x11-inch baking dish with nonstick spray.
  • In a large bowl, gently stir the cherries, granulated sugar, cornstarch, lemon juice, vanilla, and almond extract together.
  • Pour the cherry mixture into the prepared baking dish in an even layer. Make sure you pour in any accumulated juices at the bottom of the bowl as well.
  • In a medium bowl, stir together the oats, all-purpose flour, whole wheat flour, brown sugar, cinnamon, and kosher salt.
  • Pour in the melted butter and stir until the mixture is combined and evenly moistened.
  • Sprinkle the topping mixture over the cherries in an even layer.
  • Bake until the filling is bubbly and the topping is golden, for about 30-40 minutes.
  • Let the crisp stand for 10 minutes.
  • Serve warm with the ice cream.
