Ingredients
- 1 tablespoon hot water
- 1/2 teaspoon sugar
- 1/2 teaspoon instant espresso coffee powder
- 1/4 cup light tub-style cream cheese softened
- 1/2 cup frozen light whipped dessert topping thawed
- 6 chocolate wafer cookies
- white chocolate curls optional, to taste, for topping
- fresh raspberries optional, to taste, for topping
Directions
- In a medium bowl, add the hot water, the sugar, and the espresso powder and quickly whisk until the sugar and the espresso powder dissolve and the mixture seems somewhat fluffy.
- Add the cream cheese to the espresso mixture and whisk until smooth.
- Fold in the whipped topping.
- Pipe or spoon the cream cheese mixture on top of each of the wafer cookies.
- Optionally, chill the cookies until set, about 4 hours.
- Top the cookies with the white chocolate curls and the raspberries.
- Serve.
