Ingredients

1 tablespoon extra-virgin olive oil
1 medium yellow onion chopped
2 ribs celery chopped
2 large carrots peeled and cut into 1/3-inch pieces
1 teaspoon sea salt divided, plus more, to taste
4 cloves garlic minced
8 cups chicken stock
3 cups chicken cooked and shredded
1 (16-ounce) box orzo
1 tablespoon flat leaf parsley minced
1 1/4 teaspoons garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon cracked black pepper

Directions

In a large pot over medium heat, add the olive oil and heat until it is shimmering.
Add the onions, the celery, the carrots, and 1/2 teaspoon of the salt and cook, while stirring, until the onions are translucent, about 7 minutes.
Add the garlic cloves to the onion mixture and cook, while stirring, until fragrant, about 1-2 minutes.
Add the chicken stock to the onion mixture and stir to combine.
Increase the heat to high and bring the stock mixture to a boil.
Add the chicken and the orzo to the boiling stock mixture and stir to combine.
Reduce the heat to medium.
Add the parsley, 1/2 teaspoon of the remaining salt, the garlic powder, the Italian seasoning, and the black pepper to the stock mixture and stir to combine.
Simmer the orzo mixture until the vegetables and the orzo are tender and most of the liquid has been absorbed, about 20 minutes.
Taste the orzo for seasoning and add the extra salt, as needed.
Serve.
