Ingredients
- 1 (3-3.5-pound) pork sirloin
- salt to taste
- pepper to taste
- 1 teaspoon Italian seasoning
- 1 1/2 tablespoons olive oil
- 3/4 cup vegetable broth
- 1 tablespoon honey
- 1/4 cup dry white wine optional
- 3-4 potatoes rinsed, quartered, and skin-on
- 4-6 carrots cleaned, trimmed, and skin-on
- 6 cloves garlic skin-on
- 1 scallion sliced
Directions
- Season the pork with the salt, the pepper, and the Italian seasoning.
- In a large pot over medium-high heat, warm the oil.
- Brown the roast on all sides in the oil, about 8-10 minutes. It will not be cooked through.
- In a bowl, combine the vegetable broth and the honey.
- Pour the broth mixture over the meat to deglaze the pot.
- Add the white wine to the broth mixture.
- Arrange the potatoes, the carrots, and the garlic around the meat in the pot.
- Sprinkle the meat with the scallions.
- Cover and simmer on low, basting the meat and the veggies with the juices occasionally, until the pork is tender and reaches 145 degrees F internally, about 5-7 hours.
- Adjust the seasoning with the salt and the pepper, as needed.
- Serve.
