Ingredients

2 tablespoons oil
1 1/2 pounds ground beef
4-5 cloves garlic finely chopped
3 small bell peppers diced
3 tablespoons taco seasoning
1 1/2 cups corn
15 ounces salsa
1 cup rice uncooked
1 (15-ounce) can black beans drained
4 cups cheddar cheese shredded, divided
1 1/2 cups beef broth

Directions

Preheat the oven to 375 degrees F.
In a skillet over medium heat, add the oil and the ground beef and cook, breaking the meat with a spatula, until it is no longer pink, about 5-7 minutes.
Add the garlic and the bell peppers to the beef and cook for 5 minutes.
Stir the taco seasoning into the beef mixture and cook until it has thickened, about 2 minutes.
Add the corn, the salsa, the rice, the black beans, 1 cup of the cheese, and the beef broth to the beef mixture and combine well.
Top the beef mixture with the remaining cheese and bake, covered, until the rice is cooked, about 25-30 minutes.
Uncover the casserole and bake until the cheese is melty all over, about 5-10 minutes.
Serve.
