Ingredients
- 2 cups instant rice
- 1 (16-ounce) package frozen broccoli-cauliflower blend thawed
- 4 (6-ounce) orange roughy fillets
- 1 (14.5-ounce) can chicken broth
- 1 (14.5-ounce) can fire-roasted diced tomatoes undrained
- 1 teaspoon garlic powder
- 1 teaspoon lemon-pepper seasoning
- 1/4 teaspoon cayenne pepper plus more to taste
- 1/2 cup cheddar cheese shredded
Directions
- Preheat the oven to 375 degrees F.
- Grease a 9x13-inch baking dish.
- Spread the rice in an even layer at the bottom of the prepared baking dish.
- Layer the broccoli-cauliflower blend and the fish over the rice in the baking dish.
- Pour the chicken broth and the tomatoes over the top of the vegetable blend and the fish.
- Sprinkle the garlic powder, the lemon-pepper seasoning, and the cayenne pepper over the fish and vegetables.
- Cover and bake until the fish flakes easily reaching 145 degrees F internally and the rice is tender, about 25-30 minutes.
- Sprinkle the cheddar cheese on top of the fish and vegetables and bake until melted, about 5 minutes.
- Serve.
