Ingredients
For the fish:
- 3/4 cup parmesan cheese freshly grated, plus 1/4 cup, freshly shredded, divided
- 1 tablespoon lemon pepper seasoning
- 1 tablespoon parsley freshly chopped
- 1/8 teaspoon kosher salt
- 4 (4-ounce) tilapia fillets
- 1 tablespoon olive oil
Optional, for serving:
- 1/4 cup green onions diced
- 1 lemon cut into wedges
- parsley to taste, freshly chopped
- asparagus to taste, cooked and warm
Directions
- Preheat the oven to 400 degrees F.
- Line an 18x26-inch baking sheet with aluminum foil.
- In a large shallow bowl, add 3/4 cup of the grated parmesan cheese, the lemon pepper seasoning, 1 tablespoon of the parsley, and the salt and whisk to combine.
- On a large platter, add the tilapia fillets and evenly coat them with the olive oil.
- Add the tilapia fillets to the parmesan mixture and evenly coat them with the mixture by hand, pressing lightly to make sure the coating adheres.
- Lightly sprinkle the top of the coated tilapia fillets with the remaining shredded parmesan cheese.
- Transfer the fillets to the prepared baking sheet.
- Bake until the coated tilapia fillets are opaque and reach an internal temperature of 145 degrees F in the thickest portion, about 10 minutes.
- Optionally, switch the oven to broil and broil until the coating is slightly crispy, about 1-2 minutes. Be careful not to burn the fillets.
- Garnish with the green onions, the lemon wedges, and the extra parsley.
- Serve with the asparagus.
