Ingredients
- 1 (4-pound) prime rib roast
- 1/4 cup unsalted butter softened
- 1 tablespoon freshly ground black pepper
- 1 teaspoon Herbes de Provence
- kosher salt to taste
Directions
- Let the roast rest until it reaches room temperature, about 2-4 hours.
- Preheat the oven to 500 degrees F.
- In a medium bowl, add the butter, the black pepper, and the Herbes de Provence and mix until blended.
- Evenly spread the butter mixture over the entire roast.
- Generously sprinkle the salt over the roast.
- Bake the roast, uncovered, for 20 minutes.
- Turn the oven off, leave the oven door closed, and let the roast sit, about 2 hours.
- Slice the roast and serve.
