Ingredients
- 3 cups rotisserie chicken breast shredded
- 2 large tomatoes chopped
- 1 cup carrots shredded
- 1 cup corn kernels
- 1/2 cup salsa verde
- 2 cloves garlic crushed
- 1 teaspoon chili powder
- 3 ounces tortilla chips
- 1/2 cup feta cheese crumbled
- cilantro optional, to taste
- hot sauce optional, to taste
Directions
- Preheat the oven to 400 degrees F.
- Spray a 2-quart baking dish with nonstick spray.
- In a large bowl, combine the chicken, the tomatoes, the carrots, the corn, the salsa verde, the garlic, and the chili powder.
- In the prepared baking dish, arrange 1/3 of the chips.
- Top the chips layer with 1/2 of the chicken mixture and then 1/2 of the feta.
- Repeat the layers.
- Arrange the remaining chips on top of the casserole.
- Bake until hot, about 20 minutes.
- Top with the cilantro and serve with the hot pepper sauce.
