Ingredients

For the pudding:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup 2% milk
  • 3 cups fresh or frozen peaches sliced and peeled

For the sauce:

  • 1 1/2 cups water
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tablespoon butter
  • 1/4 teaspoon ground nutmeg

For serving:

  • vanilla ice cream optional, to taste

Directions

  • Preheat the oven to 400 degrees F.
  • Grease an 8x8-inch square baking dish.
  • In a medium bowl, combine the flour, the sugar, the baking powder, the salt, and the cinnamon.
  • Stir the milk into the flour mixture until just combined.
  • Fold the peaches into the flour mixture.
  • Spread the peach mixture into the prepared baking dish.
  • In a large saucepan, combine the water, the sugar, the brown sugar, the butter, and the nutmeg.
  • Bring the mixture to a boil, stirring until the sugars are dissolved.
  • Pour the sauce over the peach mixture in the baking dish.
  • Bake the pudding until the filling is bubbly and a toothpick inserted in the center comes out clean, about 40-50 minutes.
  • Serve warm or cold with ice cream.
