Ingredients

  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 12 ounces Italian sausage links
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon dried basil
  • 3/4 teaspoon salt
  • freshly cracked black pepper to taste
  • 1/2 tablespoon brown sugar
  • 1/4 pound frozen broccoli
  • 1/4 pound frozen spinach
  • 2 ounces feta cheese

Directions

  • Cook the pasta to al dente according to the package directions.
  • Drain the cooked pasta.
  • While the pasta is cooking, heat the olive oil over medium-high heat in a large skillet.
  • Add the sausages to the hot oil and cook until they are slightly browned and firm enough to slice, about 5-7 minutes.
  • Remove the sausages from the skillet and slice them into medallions.
  • In the same skillet, sauté the onion and the garlic until softened and fragrant, about 2-3 minutes. As you sauté, scrape the browned bits from the bottom of the skillet.
  • Once the onions are tender and translucent, add the sliced sausages to the skillet and cook until the sausages are cooked through, about 5 minutes.
  • Add the can of crushed tomatoes, the tomato paste, the basil, the salt, the pepper, and the brown sugar, stirring until the tomato paste is evenly combined.
  • Add in the broccoli and spinach and stir to combine. Allow the veggies to heat through, stirring occasionally.
  • Add the pasta and stir to combine.
  • Crumble the feta into the pot and stir.
  • Serve!
