Perfect Crusted Halibut takes advantage of this by coating each tender halibut fillet with a homemade lemon-garlic butter. Just say that again... lemon-garlic butter. Ingredients

For the lemon-garlic butter:

  • 1/2 tablespoon garlic minced
  • 1/2 teaspoon lemon zest plus 1/2 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup unsalted butter room temperature

For the halibut:

  • 2 (6-ounce) fresh halibut fillets
  • salt to taste
  • ground black pepper to taste
  • 3 tablespoons ground almonds

Directions

  • Preheat the oven to 400 degrees F.
  • Line a baking tray with parchment paper.
  • In a blender or a food processor, add the garlic, the lemon zest, the lemon juice, 1/8 teaspoon of the salt, and 1/8 teaspoon of the pepper and blend until puréed.
  • Add the butter to the blender and blend until fully combined.
  • Place the halibut fillets on the prepared baking tray.
  • Spread 1/2 tablespoon of the lemon-garlic butter on top of each of the halibut fillets, covering the surfaces completely.
  • Season the halibut fillets with the extra salt and the extra pepper.
  • Sprinkle the ground almonds evenly on each of the halibut fillets, carefully spreading them over the lemon-garlic butter layer.
  • Bake the halibut fillets for 5 minutes.
  • With the halibut fillets still in the oven, switch the oven to the broil setting and broil until the crust is crispy and the fillets reach an internal temperature of 145 degrees F, about 2-5 minutes.
  • Transfer the halibut fillets from the oven.
  • Top each of the fillets with 1 tablespoon of the lemon-garlic butter, reserving the remaining lemon-garlic butter for another use.
  • Serve.
