Ingredients
- 1 1/2 pounds chicken breasts boneless and skinless
- 1/2 cup barbecue sauce
- 1 cup mayonnaise
- 1/2 cup onion finely chopped
- 1/2 cup celery chopped
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 8 Kaiser rolls split
- 8 slices tomato
- 8 leaves lettuce
Directions
- In a shallow baking dish, add the chicken breasts and the barbecue sauce and turn the chicken to coat completely.
- Cover the baking dish and let the chicken breasts marinate in the refrigerator for at least 8 hours and up to overnight.
- Preheat the grill to medium-high.
- Add the chicken breasts to the hot grill and cook, flipping them once, until the chicken breasts reach an internal temperature of 165 degrees F, about 6-8 minutes per side.
- Transfer the chicken breasts to a plate to cool slightly.
- Cover the chicken breasts and place them in the refrigerator until chilled, about 1 hour.
- Chop the chicken breasts.
- In a bowl, add the chopped chicken, the mayonnaise, the onions, the celery, the salt, and the pepper flakes and stir to combine.
- Optionally, toast the split Kaiser rolls under the broiler, about 2 minutes.
- Add the chicken mixture, the tomato slices, and the lettuce leaves evenly to the Kaiser rolls.
- Serve.
