Ingredients

  • 1/4 cup fresh cilantro minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon canola oil
  • 1 (1-pound) pork tenderloin thinly sliced
  • 1 small onion sliced and separated into rings
  • 1 medium green pepper julienned
  • 4 (8-inch) flour tortillas warmed
  • cheddar cheese to taste, shredded
  • sour cream to taste

Directions

  • In a small bowl, add the cilantro, the garlic powder, the chili powder, and the cumin and mix to combine.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the pork to the oil and sauté until it reaches an internal temperature of 145 degrees F.
  • Add the onion and the green pepper to the pork and cook until crisp-tender.
  • Sprinkle the pork mixture with the seasoning mixture and toss to coat.
  • Spoon the pork mixture onto the tortillas.
  • Serve the fajitas with the cheese and the sour cream.
