Ingredients
- 1 (2-3-pound) pork loin
- salt to taste
- pepper to taste
- 2 tablespoons vegetable oil
- 8 cloves garlic minced
- 1/4 cup soy sauce
- 1 (23.5-ounce) can pineapple chunks
- 1/2 cup brown sugar
- rice optional, to taste, cooked and warm, for serving
Directions
- Trim the pork loin of excess fat.
- Season the pork with the salt and the pepper. Set it aside.
- Heat a large pan over medium-high heat.
- Add the oil.
- Once the oil is hot, add the seasoned pork loin.
- Brown the pork on each side until golden-brown, about 2-4 minutes.
- Add the pork to a slow cooker and rub it with the garlic.
- Add the soy sauce and the pineapple chunks and their juices to the slow cooker.
- Pour in the brown sugar evenly on top of the pork mixture.
- Cover the slow cooker and cook on low heat for 4-6 hours.
- Transfer the pork to a cutting board and cut it into bite-sized pieces. Return the pork pieces to the slow cooker and stir them in with the pineapple mixture.
- Serve the pork mixture over the rice.
