Ingredients
- 3 tablespoons fresh mushrooms chopped
- 2 tablespoons green pepper chopped
- 2 tablespoons onion chopped
- 1 tablespoon butter
- 5 tablespoons tomato paste
- 2 tablespoons water plus more, to taste
- 1/2 teaspoon dried oregano
- 1/8 teaspoon garlic powder
- 1/2 cup part-skim mozzarella cheese shredded
- 1 (15-ounce 2-count) package refrigerated rolled pie crusts
- 1 egg lightly beaten
Directions
- Preheat the oven to 425 degrees F.
- Grease a baking sheet.
- In a small saucepan over medium heat, add the mushrooms, the green peppers, the onions, and the butter and sauté until the veggies are tender.
- Reduce the heat to medium-low. Add the tomato paste, 2 tablespoons of the water, the oregano, and the garlic powder to the veggie mixture and stir to combine.
- Stir the cheese into the filling mixture and cook until it is melted. Transfer the saucepan from the heat.
- Unroll the pie crusts onto a flat surface, then use a 3 1/2-inch biscuit or cookie cutter to cut the pie crusts into 7 dough circles for a total of 14 circles.
- Place 1 teaspoon of the pizza filling in the center of each of the dough circles.
- Evenly brush the edges of the each of the dough circles with the extra water. Fold each of the dough circles in half and use a fork to seal the edges.
- Evenly brush the tops of each of the turnovers with the beaten egg.
- Place the turnovers on the prepared baking sheet and bake until they are golden-brown, about 12-14 minutes.
- Transfer the baking sheet from the oven and allow the turnovers to cool slightly.
- Serve.
