Ingredients
- 1/4 cup butter cubed
- 1/2 cup brown sugar packed
- 1 fresh pineapple peeled, cut into 1/2-inch cubes
- 3 cups vanilla ice cream
- 1/2 cup flaked coconut toasted
- 1/2 cup macadamia nuts toasted and coarsely chopped
Directions
- In a large skillet over medium heat, melt the butter.
- Add the brown sugar to the melted butter and stir to combine.
- Add the pineapple cubes to the brown sugar-butter mixture and cook, while stirring, until the pineapple cubes are tender, about 8-10 minutes.
- Using a slotted spoon, transfer the pineapple mixture to a plate.
- Bring the juices in the skillet to a simmer over medium heat.
- Cook the juices until they thicken into a sauce, about 3-4 minutes.
- Transfer the skillet from the heat.
- In six dessert dishes, evenly layer the pineapple mixture and the ice cream.
- Sprinkle the ice cream evenly with the coconut and the macadamia nuts.
- Serve drizzled with the warm sauce.
