Ingredients
- 1 pound ground beef
- 1 (1-ounce) package dry onion soup mix
- 1 1/2 cups hot water
- 1 (16-ounce) can diced tomatoes drained
- 1 (4-ounce) can mushrooms optional, sliced or stems and pieces, drained
- 3/4 cup long-grain rice
- 1 cup Colby-Jack or cheddar cheese shredded
Directions
- In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
- Drain the excess fat from the skillet.
- Add the onion soup mix, the water, the tomatoes, and the mushrooms to the beef and stir to combine.
- Add the rice to the beef mixture and stir to combine.
- Cover the skillet and reduce the heat to low.
- Cook until the rice is tender and the liquid is completely absorbed, about 25 minutes.
- Sprinkle the beef mixture with the cheese and cover the skillet.
- Turn off the heat.
- Allow the cheese to melt, about 5 minutes.
- Serve.
