Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 medium green bell pepper thinly sliced
  • 1 medium red bell pepper thinly sliced
  • 1 small red onion halved and thinly sliced
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 2 cloves garlic minced
  • 1 (14-ounce) can crushed tomatoes
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (10-ounce) package Italian sausage ravioli
  • 3 slices provolone cheese
  • fresh basil leaves optional, to taste, for serving

Directions

  • In a medium skillet over medium-high heat, add the olive oil.
  • Add the green bell peppers, the red bell peppers, the onions, the salt, and the black pepper and cook, while stirring occasionally, until the vegetables just begin to soften, about 5 minutes.
  • Add the garlic to the vegetable mixture and cook, while stirring frequently, until just beginning to turn golden, about 1-2 minutes.
  • Add the crushed tomatoes and their juices, the red pepper flakes, and more of the salt to the vegetable mixture and stir to combine.
  • Bring the vegetable mixture to a boil.
  • Reduce the heat to medium-low and simmer the vegetable mixture, while stirring occasionally, until it thickens into a sauce, about 8 minutes.
  • In a pot of salted, boiling water, add the ravioli and cook them to al dente, according to the package directions.
  • Drain the ravioli, then add them to the sauce. Stir to coat.
  • Top the ravioli mixture evenly with the provolone cheese and allow it to sit until melted, about 1-2 minutes.
  • Serve topped with the basil leaves.
