Ingredients
- 1/3 cup cane sugar
- 1/3 cup distilled or spring water
- 1 cup fresh raspberries plus more, to taste, for serving
- 1/2 cup distilled white vinegar
- 2 tablespoons rose water
- freeze dried raspberries to taste, crushed
- lemon juice to taste
- ice to taste, for serving
- 4 cups sparkling water
Directions
- In a small saucepan over high heat, add the sugar and the distilled water and bring it to a simmer. Cook until it is syrupy, about 4 minutes.
- In a medium bowl, add 1 cup of the fresh raspberries and use a fork to mash them.
- Add the mashed raspberries to the simple syrup and reduce the heat to medium-low. Cook, stirring occasionally, until it starts to thicken, about 5 minutes.
- Add the white vinegar and the rose water to the raspberry mixture and cook until it is fragrant, about 3 minutes.
- Strain the raspberry mixture into a heat-safe glass jar and place it in the refrigerator to chill.
- Sprinkle the crushed dried raspberries on a small plate, then pour the lemon juice onto a second small plate. Dip the rims of four serving glasses into the lemon juice and then into the crushed dried raspberries to coat.
- Evenly add the ice and the extra fresh raspberries to the prepared serving glasses, then top each with 1 cup of the sparkling water.
- Evenly pour the cooled raspberry mixture into the four serving glass.
- Serve.
