Dipped in rich, melty chocolate and topped with a sprinkle of sea salt, you won't be able to stop enjoying them!

Ingredients

  • 48 Ritz crackers
  • 3/4 cup creamy peanut butter
  • 2 3/4 cups chocolate chips
  • 1 tablespoon coconut oil
  • flaky sea salt to taste

Directions

  • Line a large baking sheet with parchment or wax paper.
  • Place 24 of the crackers on the prepared baking sheet, leaving a little space between each.
  • Spoon about 1/2 tablespoon of the peanut butter onto the center of each of the crackers.
  • Gently press 1 of the remaining crackers onto each of the peanut butter layers to form sandwich cookies.
  • In a large, microwave-safe bowl, add the chocolate chips and the coconut oil and microwave in 30-second increments, stirring between each, until it is just melted. Be careful not to overheat.
  • Dip the cracker sandwiches into the chocolate, 1 at a time, and use two forks to move them around to completely cover. Lift them and allow the excess chocolate to drip off.
  • Transfer the coated cookies to the prepared baking sheet and sprinkle with the sea salt.
  • Let the coated cookies sit until the chocolate hardens, about 1 hour.
  • Serve.
