Ingredients
- 3/4 cup walnuts
- 6 cups arugula
- 1 ripe pear cored and thinly sliced
- 3 1/2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons olive oil
- 1/2 cup blue cheese crumbled, for topping
Directions
- In a dry, deep pan over medium heat, add the walnuts and toast, stirring constantly, about 1-2 minutes.
- Allow the walnuts to cool, for about 5-10 minutes, then roughly chop the walnuts.
- In a large bowl, add the arugula, the pear, and the toasted walnuts.
- In a small bowl, whisk together the vinegar, the honey, the salt, the pepper, and the olive oil.
- Drizzle the dressing over the salad and top with the crumbled blue cheese.
- Serve.
