Ingredients
- 1 teaspoon dijon mustard
- 1 teaspoon honey
- 2 tablespoons sherry vinegar
- 1/4 cup extra-virgin olive oil
- kosher salt to taste
- black pepper to taste
- 9 cups (1 bunch) of kale stems removed and torn into bite-size pieces
- 1 apple cut into matchsticks
- 3/4 cup white cheddar shredded or grated
- 1 1/2 cups rotisserie chicken shredded
- 1/2 cup pumpkin seeds
Directions
- In a small bowl, whisk together the dijon mustard, honey, and sherry vinegar.
- Slowly, while whisking constantly, add the olive oil. This should help the dressing emulsify.
- Season the dressing with salt and pepper.
