Ingredients

  • 2 pounds chicken thighs boneless and skinless, trimmed
  • salt to taste
  • pepper to taste
  • 1 cup jarred salsa
  • juice of 1 lime
  • 1/4 cup cilantro chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 tablespoon honey
  • 3 cloves garlic minced
  • cooked rice or tortillas optional, to taste, warm, for serving

Directions

  • Spray a slow cooker with cooking spray.
  • Season the chicken thighs with the salt and the pepper.
  • Place the chicken thighs in the slow cooker.
  • In a large bowl, mix the salsa, the lime juice, the cilantro, the chili powder, the cumin, the honey, and the garlic together.
  • Pour the salsa mixture over the chicken thighs and turn to coat them.
  • Cover and cook on low heat until the chicken thighs are fall-apart tender, about 3-5 hours.
  • Turn the slow cooker's "warm" feature on.
  • Shred the chicken thighs using two forks.
  • Serve the chicken over the rice or with the tortillas.
