Ingredients
- 6 slices bacon chopped
- 1 medium onion chopped
- 2 (12-ounce) turkey breasts boneless and skinless
- salt to taste
- pepper to taste
- 1/2 cup Mexican blend cheese shredded
- 1 tablespoon olive oil
Directions
- Preheat the oven to 375 degrees F.
- In a skillet, fry the bacon and the onion together until the bacon is crisp and the onion is translucent, about 6-8 minutes. Set it aside.
- On a clean, flat surface, cut each of the turkey breasts in half horizontally without slicing all the way through, then open each of them up like a book into one bigger piece.
- Place each of the butterflied turkey breasts between two pieces of parchment paper or plastic wrap.
- Using a meat mallet, gently pound both of the turkey breasts to make them as thin as possible.
- Season the breasts with the salt and the pepper.
- Evenly top the turkey breasts with the cheese blend and the bacon mixture, leaving about a 1-inch border.
- Roll up each of the turkey breasts as tight as possible and secure with butcher's twine or kitchen string.
- In an oven-proof skillet, heat the olive oil over medium-high heat.
- Cook the rolled turkeys in the hot olive oil until they are evenly browned on all sides, about 3 minutes on each side. Doing this in batches is recommended.
- Place the skillet in the oven and roast until both of the turkey breasts' internal temperature reads 170 degrees F, about 45 minutes.
- Slice and serve.
