Ingredients
- 1 1/2 pounds chicken breast boneless and skinless
- 1/2 cup barbecue sauce
- 1 cup mayonnaise
- 1/2 cup onion finely chopped
- 1/2 cup celery chopped
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 8 tomato slices
- 8 lettuce leaves
- 8 kaiser rolls split
Directions
- Place the chicken breasts in a shallow baking dish.
- Cover the baking dish and refrigerate overnight.
- Preheat the grill to medium-high heat.
- Add the barbecue sauce to the chicken breasts and turn to coat.
- Grill the chicken breasts, covered, until they reach an internal temperature of 165 degrees F, about 6-8 minutes per side.
- Let the chicken breasts rest at room temperature.
- Place the chicken breasts in a large bowl, cover, and refrigerate until chilled.
- Chop the chicken breasts and return to the bowl.
- Stir the mayonnaise, the onion, the celery, the salt, and the red pepper flakes in with the chopped chicken.
- Place the chicken salad, the tomato, and the lettuce on the rolls.
