Ingredients

  • 1 pound ground pork
  • 1 medium onion chopped
  • 2 medium carrots chopped
  • 3 cups potatoes diced and cooked
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-4 eggs

Directions

  • In a cast-iron skillet, cook the pork over medium heat until it’s no longer pink, about 5-7 minutes.
  • Add the onion and carrots, cooking until the onions are translucent and the carrots are tender, about 5 minutes.
  • Stir in the potatoes.
  • Season with the salt and pepper.
  • Reduce the heat to low.
  • Cook until the potatoes are crispy.
  • Top with eggs.
  • Cover the skillet until the eggs are cooked to your preferred doneness, about 2-5 minutes.
  • Serve immediately.
