Ingredients
- 6 large eggs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon butter
- 1 (1-pound) round loaf French bread
- 6 ounces sliced deli ham divided
- 3/4 cup Monterey Jack
- cheese shredded and divided
- 3/4 cup cheddar cheese shredded and divided
- 1/2 medium sweet red pepper thinly sliced
- 1 medium tomato thinly sliced
Directions
- Preheat the oven to 350 degrees F.
- Whisk the eggs, salt, and pepper together.
- Heat the butter in a large skillet on the stove-top over medium heat.
- Pour the egg mixture into the hot skillet.
- Cook and stir the eggs until the eggs thicken and no liquid remains, for about 5 minutes.
- Remove the skillet from the heat.
- Cut 1/4 of the French bread loaf off the top. Hollow out both parts of the loaf, creating a 1/2-inch shell.
- Pour 1/4 of the ham in the bread bottom.
- Add half of the Monterey Jack and cheddar cheese.
- Layer in the red pepper, scrambled eggs, tomato, and the remaining ham, Monterey Jack, and cheddar cheeses.
- Press the layers gently together, and replace the bread top.
- Wrap the bread tightly in foil.
- Bake until the loaf is heated through, about 25-30 minutes.
- Let it stand for at least 10 minutes before serving in wedges.
