Ingredients
- 2 tablespoons olive oil
- 1 medium onion finely chopped
- 4 medium zucchinis chopped
- 2 large tomatoes finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large skillet over medium-high heat, heat the oil.
- Add the onion to the oil and cook, while stirring, until tender, about 2-4 minutes.
- Add the zucchinis to the onion and cook, while stirring, for 3 minutes.
- Stir the tomatoes, the salt, and the pepper into the zucchini mixture and cook, while stirring, until the veggies are tender, about 4-6 minutes.
- Serve using a slotted spoon.
