Ingredients
- 2 (14-ounce) water-packed artichoke hearts
- 3 cups chicken cooked, shredded
- 3 cups refrigerated spinach tortellini cooked
- 1 1/2 cups mayonnaise
- 1 1/2 cups Asiago cheese grated, divided
- fresh basil optional, to taste
Directions
- Preheat the oven to 350 degrees F.
- Grease a 13x9-inch baking dish.
- Reserve 1/4 cup of the juice from the artichoke hearts and drain the rest.
- Coarsely chop the artichoke hearts.
- In a large bowl, combine the chicken, the tortellini, the mayonnaise, 1 cup of the cheese, and the reserved artichoke liquid.
- Transfer the artichoke mixture to the prepared baking dish and sprinkle with the remaining cheese.
- Bake the casserole until it is bubbly and starting to brown, about 30 minutes.
- Garnish the casserole with the basil and serve.
