Ingredients
For the potatoes:
- 1 pound baby gold or red potatoes cut in half
- 1 tablespoon olive oil plus more to taste
- salt to taste
- pepper to taste
- 2 teaspoons garlic powder
For the pork chops:
- 4 pork chops thick-cut and boneless
- pepper to taste
- salt to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian herb seasoning blend
- 1/2 teaspoon smoked paprika
- 2 teaspoons dry ranch seasoning
For the broccoli:
- 3 cups broccoli florets
- 2 tablespoons olive oil
- salt to taste
- pepper to taste
For serving:
- 1/3 cup parmesan cheese grated
Directions
- Preheat the oven to 425 degrees F.
- Grease a baking sheet.
- Toss the potatoes with the 1 tablespoon of the olive oil, the salt, the pepper, and 2 teaspoons of the garlic powder.
- Arrange the potatoes on 1/3 of the baking sheet, making sure to brush the sheet pan with a little olive oil.
- Bake the potatoes for 10 minutes.
- While the potatoes are baking, generously season the pork with the pepper, the salt, the remaining garlic powder, the Italian blend, the paprika, and the ranch seasoning.
- Add the pork chops to the pan with the potatoes, arranging them in the center third of the pan.
- Bake for 10 minutes.
- While the pork and potatoes bake, in a bowl, toss the broccoli with the remaining oil and season with the salt and the pepper.
- Arrange the coated broccoli on the remaining third of the baking sheet.
- Bake until the internal temperature of the pork reads 145 degrees F and the broccoli and potatoes are easily pierced with a fork, about 10-15 minutes.
- Allow the pork to rest for 3-5 minutes.
- Sprinkle with the cheese and serve.
