Ingredients
- 1/3 cup low-sodium chicken broth divided
- 1 1/2 teaspoons cornstarch
- 2 teaspoons lime zest
- 1/3 cup fresh lime juice
- 1/4 cup honey
- 1 tablespoon soy sauce
- 4 chicken breasts boneless and skinless
- salt to taste
- freshly ground black pepper to taste
- 1 1/2 tablespoons olive oil
- 1 1/2 tablespoons butter
- 2 cloves garlic minced
- cooked coconut rice optional, for serving
Directions
- Pour 1 tablespoon of the chicken broth into a small bowl.
- Add in the cornstarch using a whisk.
- Pour in the remaining chicken broth, as well as the lime zest, lime juice, honey, and soy sauce.
- Mix to blend the mixture with a whisk, and set it aside.
- Use a meat tenderizer to pound the thicker parts of chicken to an even thickness.
- Season each side of the chicken with salt and pepper.
- Heat up the olive oil in a large skillet over a medium-high heat.
- Cook the chicken until golden brown and cooked through, about 5-6 minutes.
- Transfer the chicken to a plate and cover with aluminum foil to keep it warm.
- Melt the butter into the same skillet on a medium heat.
- Saute the garlic until it is golden and fragrant, around 30 seconds.
- Mix the lime juice mixture with a whisk and pour it into the skillet, cooking and stirring until the mixture has reduced slightly, about 2 minutes.
- Return the chicken to the skillet, and spoon sauce over the chicken.
- Serve over coconut rice!
