Ingredients

1 (15-ounce) package cornbread mix
2 eggs beaten
1 1/3 cups milk
2 pounds lean ground beef
1 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard
1 teaspoon garlic powder
1 (15-ounce) can corn drained
1 1/2 cups cheddar cheese shredded
fresh parsley chopped, to taste, for garnish

Directions

Preheat the oven to 350 degrees F.
Spray a 9x13-inch baking dish with cooking spray.
In a mixing bowl, whisk the cornbread mix, the eggs, and milk together until smooth.
Spread the cornbread batter evenly in the prepared baking dish.
Bake until the cornbread is not entirely baked through, about 20 minutes.
In a skillet over medium-high heat, add the ground beef and cook, while crumbling, until browned, about 5-7 minutes. Drain the excess fat from the skillet.
Mix the ketchup, the brown sugar, the mustard, and the garlic powder into the beef.
Keep the sloppy joe mixture on low heat to stay warm.
Top the partially baked cornbread with the corn.
Spread the sloppy joe mixture evenly over the corn layer.
Sprinkle the shredded cheese over the casserole.
Bake until the cheese is melted and the cornbread is cooked through, about 15 minutes.
Let the casserole rest for 5 minutes.
Garnish with the parsley and serve.
