Ingredients

  • 3 pounds corned beef with accompanying spice packets
  • 1 cup water plus more depending on the size of slow cooker
  • 3 cloves garlic minced
  • 1 bay leaf
  • 2 tablespoons sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon ground black pepper

Directions

  • Add the corned beef, fat side up, to the slow cooker.
  • Add the spice packets, minced garlic, pepper, and sugar to the top of the meat, rubbing it on.
  • Add the bay leaf and vinegar off to the side of the corned beef.
  • Add just enough water to come up 1/4 of the way to the top of the meat.
  • Cook on low heat, covered, for 8-9 hours.
  • If the corned beef isn't browned on top, put it under a broiler for 1-2 minutes in an oven-safe container. Keep careful watch, as you don't want to burn it!
  • Carve and serve hot!
