Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pounds ground beef
  • 1 onion diced
  • kosher salt to taste
  • pepper to taste
  • 1 (28-ounce) can diced tomatoes undrained
  • 1 (8-ounce) can tomato sauce
  • 2 cups chicken broth
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 pound rotini pasta
  • 2 cups water
  • 2 cups cheddar cheese shredded
  • 1 Roma tomato diced
  • 2 green onions sliced

Directions

  • In a large stockpot or Dutch oven over medium heat, warm the olive oil.
  • Add the beef, the onion, the salt, and the pepper and cook, while crumbling the beef, until the meat is no longer pink, about 5-7 minutes. Drain the excess fat.
  • Stir the diced tomatoes, the tomato sauce, the chicken broth, the ketchup, the mustard, the pasta, and the water to the beef mixture and bring to a boil.
  • Cover the stockpot, lower the temperature of the stovetop, and simmer until the pasta is cooked to al dente, about 15 minutes.
  • Transfer the pasta mixture from the stovetop and top with the shredded cheese. Cover the stockpot until the cheese has melted, about 2 minutes.
  • Garnish with the Roma tomatoes and the green onions and serve.
