Ingredients
- 1 (8-ounce) package soba noodles
- 1/4 cup rice wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 clove garlic pressed
- 1 teaspoon ginger grated
- 2 green onions thinly sliced
- 2 tablespoons fresh cilantro leaves chopped
- 1 teaspoon sesame seeds
- 2 hard boiled eggs sliced lengthwise, for garnish
Directions
- In a large pot of salted, boiling water, cook the noodles to al dente according to the package directions.
- Drain the noodles into a colander, rinse them under cold water, drain the water, and return the noodles to the pot. Cover and keep warm.
- In a small bowl, whisk the rice wine vinegar, the soy sauce, the sesame oil, the sugar, the garlic, and the ginger together.
- In a large serving bowl, add the noodles, the sauce mixture, the green onions, the cilantro, and the sesame seeds and mix well.
- Plate the noodles with the sauce, garnish with the eggs, and serve.
