Ingredients
- 1 (16-ounce) package spaghetti
- 12 ounces bacon chopped into 1-inch-wide pieces
- 5 cloves garlic peeled
- 2 tablespoons tomato paste
- 1 cup heavy whipping cream
- sea salt to taste
- freshly ground black pepper to taste
- parmesan cheese to taste, grated, for garnish
Directions
- In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Reserve 1/2 cup of the pasta water, then drain the rest.
- While the spaghetti is cooking, in a large skillet over medium-low heat, add the bacon pieces and cook until they are crisp, about 7-9 minutes.
- Place the cooked bacon on a paper-towel-lined plate and let it drain. Reserve 1 tablespoon of the bacon drippings in the skillet and discard the rest.
- In the same skillet over medium heat, add the garlic cloves to the bacon drippings and cook, stirring frequently, until they are soft and fragrant, about 1-2 minutes.
- Add the tomato paste to the garlic cloves and cook, stirring frequently, about 1 minute.
- Add the heavy whipping cream to the sauce mixture and cook, whisking frequently, until it begins to bubble and thicken, about 2-3 minutes. If it becomes too thick, add enough of the reserved pasta water so that the sauce barely coats the back of a spoon. The sauce shouldn't be too thick.
- Taste the sauce and season with the salt and the black pepper, as needed.
- Toss the spaghetti noodles and the reserved bacon with the sauce until the pasta is well-coated.
- Garnish the pasta with the parmesan cheese. Serve immediately and enjoy!
