Ingredients

  • 1 pound ground sausage
  • 1 small white onion diced
  • 1 green bell pepper diced
  • 2 teaspoons garlic minced
  • 2 tablespoons taco seasoning
  • 1 cup salsa
  • 1 (15-ounce) can black beans rinsed and drained
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 large eggs
  • 1/3 cup milk
  • 8 corn tortillas cut into quarters
  • 2 cups Mexican-style cheese shredded
  • tomatoes to taste, diced, for topping
  • cilantro to taste, chopped, for garnish

Directions

  • Preheat the oven to 375 degrees F.
  • Coat a 9x13-inch baking dish with nonstick cooking spray.
  • In a large skillet over medium heat, add the sausage and cook, while crumbling, until it is no longer pink.
  • Transfer the cooked sausage to a bowl. Reserve 2 tablespoons of the grease in the skillet and drain the rest.
  • Add the onions and the bell peppers to the grease in the skillet and sauté until they are soft, about 5-6 minutes.
  • Add the garlic to the onion mixture and cook until it is fragrant, about 1 minute.
  • Stir the cooked sausage, the taco seasoning, the salsa, the black beans, and the corn into the onion mixture and cook until it is heated through and combined.
  • Transfer the skillet from the heat.
  • In a medium bowl, add the salt, the pepper, the eggs, and the milk and whisk to combine.
  • In the bottom of the prepared baking dish, evenly layer 1/2 of the tortilla pieces, then evenly top with 1/2 of the sausage mixture, 1/2 of the egg mixture, and 1/2 of the cheese. Repeat the layers once.
  • Bake the sausage bake until the center is set, about 45-55 minutes.
  • Transfer sausage bake from the heat and let it rest, about 10-15 minutes.
  • Serve the sausage bake topped with the tomatoes and the cilantro.
