Ingredients
- 2 pounds carrots peeled and sliced lengthwise
- 1 tablespoon oil
- salt to taste
- black pepper to taste
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1 clove garlic grated
- 1/2 teaspoon parsley chopped, can substitute thyme
Directions
- Preheat the oven to 425 degrees F.
- On a baking sheet, add the carrots, the oil, the salt, and the black pepper and toss to combine.
- Roast the carrots, turning them once halfway through, until they are tender, about 18-20 minutes.
- In a small saucepan over medium heat, add the honey and the balsamic vinegar and cook, while stirring, until slightly thickened, about 5 minutes.
- Turn off the stovetop heat.
- Add the garlic and the parsley to the honey mixture and stir to combine.
- Drizzle the honey mixture over the carrots and toss to coat and combine.
- Serve.
