Ingredients
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- 2 cloves garlic minced
- 2 teaspoons lemon zest grated
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1 1/2 pounds chicken breasts boneless and skinless, cut into 1 1/2-inch pieces
- 3 medium zucchinis halved lengthwise and cut into 1 1/2-inch slices
- 3 medium onions cut into wedges
- 12 cherry tomatoes optional
Directions
- In a large bowl, whisk the olive oil, the vinegar, the garlic, the lemon zest, the lemon juice, the salt, the sugar, the oregano, and the pepper together, setting aside 1/4 cup for basting.
- In a large bowl, add 1/2 of the marinade and the chicken and turn to coat.
- In another large bowl, add the remaining marinade, the zucchinis, the onions, and the tomatoes, turning to coat.
- Cover and refrigerate the chicken and the vegetables for at least 4 hours and up to overnight.
- Preheat the grill to medium heat.
- Drain the chicken and the vegetables and discard the marinade from the bowls.
- Alternately thread the chicken and the vegetables onto metal skewers or soaked wooden skewers.
- Grill the skewers, covered, while occasionally basting with the reserved marinade, until the chicken's internal temperature reaches 165 degrees F, about 6 minutes per side.
- Transfer the skewers from the grill and serve.
